Neil’s Barbecue Dry Rub

This rub recipe is good for any meat, but especially formulated for slow smoked pork and chicken.  The sugar will tend to caramelize and burn if used over too high of heat.  Modify this base to taste.  See some variations I have tried below.

  • 1 cup – light brown sugar
  • 3/4 cup – white sugar
  • 6 tsp – no salt seasoning * (or Cavender’s No Salt)
  • 6 tsp – paprika
  • 4 tsp – onion powder
  • 4 tsp – garlic powder
  • 3 tsp – Cajun seasoning (optional)
  • 1 tsp – salt

Creamed Corn

Creamed corn on Thanksgiving is a super-common vegetable side dish, but it also can be the one that you a) make last minute b) doesn’t take up any oven space c) will trick your family into thinking it simmered for hours.

This recipe is genius because it literally allows you to fry up some bacon and then dump it into your slow cooker along with canned corn, milk, butter, cream cheese, and a pinch of sugar.

PREP TIME: 0 HOURS 10 MINS
COOK TIME: 2 HOURS 0 MINS
TOTAL TIME: 2 HOURS 10 MINS

INGREDIENTS
8 slices bacon
5 (15-oz.) cans corn kernels, drained
1 c. milk
1 tbsp. sugar
Kosher salt
Freshly ground black pepper
1 oz. (8-oz.) block cream cheese, quartered
1/2 c. (1 stick) butter, cut into tablespoons
Thinly sliced green onions, for garnish
