Sweet Hawaiian Crockpot Chicken

Ingredients

  • 4-6 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • ½ cup soy sauce
  • ½ cup ketchup
  • 1/3 cup brown sugar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 1 can pineapple chunks, drained
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Cooked rice, for serving
  • Sesame seeds and chopped green onions (for garnish)

Instructions:

  1. Place Chicken:
    – Lay the chicken breasts at the bottom of the crockpot.
  2. Mix Sauce:
    – In a bowl, combine pineapple juice, soy sauce, ketchup, brown sugar, garlic, and ginger. Pour this sauce over the chicken.
  3. Add Pineapple:
    – Sprinkle pineapple chunks over the chicken.
  4. Cook:
    – Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  5. Thicken Sauce:
    – In a small bowl, mix cornstarch and water. Stir this mixture into the crockpot to thicken the sauce. Let it cook for an additional 30 minutes.
  6. Serve:
    – Serve the chicken and sauce over cooked rice. Garnish with sesame seeds and chopped green onions. Enjoy the sweet and savory flavors!
