Chuck Wagon Stew

Ingredients

  • 1 pound ground beef, seasoned with salt and pepper
  • 16 ounces canned baked beans
  • 1/2 cup ketchup
  • 1 bell pepper, chopped
  • 1/2 cup onion, diced
  • 1 large carrot, peeled & diced
  • 1 1/2 cups beef broth
  • 1 teaspoon salt (or more)
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon red pepper flakes (or black pepper)
  • 1 tablespoon oil of your choice

Instructions

  1. Add the oil to a large skillet over medium-high heat. When hot, add the ground beef and onion.
  2. Cook until the beef is browned, approximately 3 to 5 minutes. Crumble the beef as it cooks. Drain the grease and add the mixture to the slow cooker.
  3. Add all the remaining ingredients to the slow cooker. Stir to mix well.
  4. Cook HIGH for 3 to 4 hours or LOW 6 to 8.
