Ground Beef Vegetable Soup

Ingredients

  • 2 pounds ground beef
  • 12 ounces frozen vegetables
  • 1/2 pound potatoes, diced
  • 1/3 cup onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 15 ounces crushed or diced tomatoes
  • 1 tablespoon dried parsley
  • 2 teaspoons salt (or more)
  • 1/2 teaspoon pepper
  • 1 tablespoon oil of your choice

Instructions

  1. Crumble the ground meat as it cooks. Add onion.
  2. Drain the grease and add the beef to the slow cooker.
  3. Add all the remaining ingredients. Stir to mix well.
  4. Cook HIGH 3-4 hour or LOW 6-8.
