Simple Shepherd’s Pie

Ingredients

  • 1-2 pounds ground beef
  • 1-8 oz chopped onions
  • ½-12 oz pkg frozen peas & carrots
  • 1-12 oz pkg frozen sweet corn
  • 1-pre-made frozen deep dish pie crust
  • 1-24 oz container of pre-made mashed potatoes
  • 1-8 oz pkg shredded cheese

Directions

  • Brown & season ground beef & drain
  • Add frozen veggies and cook until soft
  • Thaw and bake pie crust until golden brown
  • Microwave mashed potatoes until warm (helps them spread better)
  • Assemble pie:  Layer ground beef mixture and cheese in pie crust, top with mashed potatoes , top potatoes with more shredded cheese.
  • Bake in oven at 350° until cheese topping melts.
  • Serve
