Sweet Potato Casserole

  • 2 (40 ounce) can Bruce cut yams, drained
  • 1 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2egg, beaten
  • 8 tablespoons melted butter
  • 1 (16 ounce) bag miniature marshmallows – adjust as preferred
  1. Spray 2 quart baking dish with Pam.
  2. Heat oven to 350 degrees.
  3. Mash yams in a large bowl and add brown sugar, salt, cinnamon, egg, and melted butter.
  4. Mix well.
  5. Add 1/2 bag of marshmallows and mix in well.
  6. Add all into baking dish.
  7. Bake for 30-40 minutes.
  8. Remove from oven and top with remaining marshmallows.
  9. Turn oven to broil and move casserole to the upper middle rack. Broil for approximately 5 minutes or until marshmallows are lightly browned.
